When Tim Kellogg, proprietor of Meeteetse Chocolatier, imagined a flavor for a new confection, he thought of the fragrant sagebrush growing all over Wyoming. He then turned to culinary sage, using the mild leaves to flavor Callebaut chocolate for his sage truffles—$1.75 each in Meeteetse, Wyo., at 1943 State Street.
